Is it possible to use PDF Creator and not have the headers and/or footers?
Or is there a way to change what is included in the header/footer? I would like to keep the "page # of #" in the footer, and possibly the date, but I would like to eliminate the header entirely, if possible.
Can this be done?

Hi,
the printing application sends the header/footer information to the printer, so you need to change the settings of the printing application to influence any header/footer data. It can not be done in PDFCreator, since it is not possible to determine the footer or header within the postscript file.

I found a workaround for not printing the headers and footers on a webpage. -
Do a print preview first. This gives you the option to turn off headers and footers.(Alt + E in Internet Explorer)
THEN print to PDFCreator.
For printing out an email, I had to first view the email as a webpage and then follow the above instructions.
