Why is my computer print settings defaulting to Tabloid?

I’m a Mac user running Lion. How can I change this? It only does this on certain programs: Adobe Reader, Preview, Safari, Excel and Text Edit. 


Word and Entourage, for some reason, default to letter.

Any suggestions?
